I think this would affect individual cameras as well as the overview screen but have you verified the pause button in the upper right isn't red (selected). I hit that when closing the interface on accident and it paused all the displays.

I don't have Amcrest cameras but with my Dahua setup either with the make as Dahua or Generic/ONVIF RTSP I left the audio path blank and set the format to 64 kbps G.711 a-law and audio works on all of my cameras that have a Mic built in. I've found the IP Cam Soft Pro app https://apps.apple.com/us/app/ip-cam-soft-pro/id518516052 on an iOS device and an Apple TV a good combination for getting live feeds on your Apple TV. Blue iris should keep its files to the space or number of days you have set. However if you store other things on the drive they can cause over allocation issues so its best to have a drive dedicated to Blue Iris and leave at least 10GB unallocated.

If you use a compatible intel video card you should see the cpu usage go down when you turn on the intel mode and direct to disk recording
