My CPU ranges depending on activity and triggers see attached for current, but I have seen it as low as 19% and as high as 68% once in a while I have seen spikes into the 80% but it's from all cameras triggering.

I think the biggest issues is the CPU cores you would need to allocate and the potential inability to passthrough the GPU processing power. Unraid allows you to pass HW through, so that won't be an issue. As for CPU...

Has anyone setup BI on a virtual host? Id like to eliminate the extra computers and use the power of my Unraid server to setup a virtual desktop or a Docker instance.
